Tomato Basil Soup

1 small sweet onion diced

4 cloves garlic diced

2 large cans tomato sauce

2 large bunches fresh basil pureed in food processor

4 cans chicken stock

Olive Oil

Sour Cream

 

 

Saute onion in olive oil unti translucent. Add garlic and saute, do not brown garlic, makes for a bitter flavor. Add tomato sauce, basil and chicken stock bring up to gentle boil then turn down. Simmer for = hour. Taste at this point to determine if you want stronger garlic or stronger basil flavor and adjust. Top with a dollop of sour cream. You can make this festive by topping with a dollop of Pesto, but be careful, will alter the flavor.
