STUFFED PORK CHOP
This recipe is for 1, but we split it. The more you make, the longer the cooking time.
1 nice thick Boneless Pork Chop
2 Oz Soft Ripened Cheese (Camembert, Brie, Cambazolla,
Or
2 Oz Cream Cheese and a good sharp cheese, cheddar, asiago, etc.
1 Tbs Pinenuts
1 Tbs prepared Pesto, or 4 leaves basil and a large garlic clove
1 slice proscuitto
1 small shallot (optional)
1/4 cup of Fresh Spinach, or Fresh Zucchini or Canned Artichokes
2 slices good bacon
Preheat the oven to 400 degrees
In food processor blend the cheese, Pinenuts, basil, garlic, shallot, proscuitto and green veggie
Slit the Pork Shop nearly all the way through to form a pocket. Stuff the Pork Chop. Work the stuffing to stretch the pork chop and get as much of the stuffing in as possible.
Wrap the Pork Chop in the bacon like a Christmas present
Put the Wrapped Pork chop in a pyrex dish, a small one is preferable so it doesnt fall over while baking and let all the cheese ooze out.
Bake for 30 minutes.
Remove the Chop form the oven and let sit for 5 or 10 minutes before serving.
