Pork Chop Custard
This is a little different way to cook pork chops. You need some thinly sliced loin chop and a small sized casserole dish.
4 - Thinly sliced pork loin chops, boneless, lightly floured.
1 tbs butter
3 slices jack cheese
= cup cream (can be fat free or heavy, doesnt matter)
1 egg
1 can diced ortega chiles
1 cup shredded jack cheese ( can use pepper jack for extra kick)
Heat oven to 375.
Heat butter in skillet. One at a time brown the pork chops. This is a flash fry, you do not want to cook them through, just get a crust on them. Cut them into silver dollar size.
In a casserole dish, layer the pork chops and the cheese slices.
Mix together the cream and cream, ver thoroughly and add the diced chiles and shredded cheese.
Pour the cream mixture over the pork chops in the casserole dish. The cream mixture should run down and into the pork chops and cheese slices. Jiggle it a bit with a fork if necessary to get it down.
Salt & pepper to taste
Bake in preheated oven for approx 30 minutes. Top should be slightly brown the mixture clearly bubbling throughout the dish.
Let this sit covered with foil for at least 10 minutes and serve. It is yummy and different.
