Pasta Salad with Tomato Basil Vinaigrette

 

1 cup Fresh Tomatoes (canned diced work if quality fresh isnt available)

1/4 cup Basil chopped

1/8 cup Red Wine Vinegar

1/8 cup Balsamic Vinegar

2 shallot chopped

2 garlic cloves chopped

1 cup Extra Virgin Olive Oil

1/4 cup Red Onion

2 TBS capers

1/4 cup Parmesan Cheese

Salt, Pepper and Red Pepper Flakes to taste

Mix all ingredients in a bowl. Can be stored for a couple of days.

1 lb Pasta (Bow Tie or Cork Screw are sturdier)

Cook pasta, drain and top with dressing.
