Chocolate Mousse in Chocolate Cup - This is my easy recipe for Chocolate Mousse, no cooking other than melting the chocolate.

12 Chocolate cups (can be bought at upscale markets)

12 oz bittersweet chocolate (I like 70% Schaffenberger)

1 qt whipping cream

6 egg whites

Splenda

2 tsp Vanilla

1/4 tsp Cream of Tartar

Pinch Salt

 

 

Melt the Chocolate over a double broiler, just to melt, do not heat

Beat the Egg whites to stiff peaks. Add cream of tartar and pinch of salt. Put in refrigerator while doing rest

Whip cream, add vanilla, pinch of salt and sweeten with splenda to taste

Slowly fold room temperature chocolate into whipped cream. Then fold in the egg whites. DO NOT OVER BEAT, it will all turn to liquid if you beat the air out.

Spoon into chocolate cups and refrigerate. Top more whipped
cream if desired or chocolate curls.
