Breakfast Fritta
A favorite recipe of ours, especially for weekends or when we have company for breakfast. This recipe is done for just two, but can easily be multiplied.
= sliced sweet onion
1/4 sliced pasilla pepper
1/4 sliced bell peppers
1/4 jalapeno (seeded or not your choice)
4 cloves garlic smashed
2 slices bacon diced
1/4 tube Jimmy Dean Hot Sausage
4 eggs mixed
1 - 2 cups shredded cheese, your choice
1 TBS. Olive Oil
1 TBS. Butter
Salt and Pepper
Heat oven to 400 degrees
In a small frying pan fry the bacon and sausage. Remove the meat but leave in the drippings. Add a small amount of Olive Oil, then add in the onions and peppers and saute until soft and the onions are slightly browned. Add the garlic and put the meat back in. Melt the butter. Pour the eggs over the mixture. Cook over low heat to just set up the bottom of the eggs. Cover with the cheese and slip into the oven to finish about 10 - 15 minutes until the eggs not longer jiggle.
We generally use a variety of cheeses, depending on what we have. Doesnt matter, it can bel all one or several of your favorites.
When you take it out of the oven, bang the pan on counter to loosen the fritta before cutting and serving.
