Black Bean Sausage Soup
A great winter time warmer.
1 lb. spicy sausage cut into pieces
1/4 cup diced pasilla or poblano pepper
1/2 cup diced bell pepper
1 cup diced yellow onion
1 diced jalapeno (with or without seeds, your choice)
4 garlic cloves, smashed and diced
1 can chopped tomatoes
2 cups beef stock
1 tlb cumin
1/4 tsp cayenne, or hot paprika
1 can black beans
Pasta if desired
1/2 cup chopped cilentro
Saute the sausage, onion, peppers and garlic in olive oil, until the onions are translucent. Add the beef stock, tomatoes and seasonings. Simmer for about 1 hour. Add the black beans and pasta, cook another 15 minutes, add the fresh cilentro and serve. Top with cheddar cheese, sliced avocados and sour cream.
You can make your own black beans, make sure to season them a bit as they come seasoned in the can.
